Poppy Seed Muffins

Ingredients

  • 2 c. flour
  • 1/4 c poppy seeds
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1/2 c. butter, softened
  • 3/4 c. sugar
  • 2 eggs
  • 3/4 c. sour cream
  • 1 1/2 tsp. vanilla

Directions

  1. Preheat oven to 375 degrees

  2. Grease muffin tins or use paper liners.

  3. Combine flour, poppy seeds, salt and baking soda in a small bowl.

  4. Using electric mixer, cream butter with sugar until thick and light.

  5. Beat in eggs, one at a time.

  6. Blend in sour cream and vanilla.

  7. Gradually beat in dry ingredients.

  8. Spoon batter into prepared tin.

  9. Bake until tester inserted in centers comes out clean – about 20 minutes.

  10. Cool 5 min. in tin or on rack.
