Chicken Satay with Peanut Sauce

Serves 4 people

Ingredients

  • 3 Chicken Breasts, boneless, skinless
  • 3 TB soy sauce, divided
  • 3 TB lemon juice, divided
  • 3 cloves garlic, minced
  • 1 TB sesame oil
  • 1 tsp curry powder
  • 1/2 c natural peanut butter
  • 1 c canned coconut milk
  • 1/4 c brown sugar
  • 1/4 tsp cayenne pepper (to taste)

Directions

  1. Cut chicken breasts into flat strips about 1×2 inches (about 30 pieces total)

  2. place chicken in large ziplock bag with 2 tablespoons soy sauce, 2 tablespoons lemon juice, garlic and oil.

  3. marinate at room temp for 30 minutes, turning frequently

  4. combine all remaining ingredients into small bowl to make sauce-warm when ready

  5. thread marinated chicken onto skewers (barely touching)

  6. broil on high in oven for about 5 minutes, or grill

  7. turn and cook another 3-5 minutes
