Spinach Salad

Serves a ton. Might want to cut it in half.
Still the best spinach salad I have ever had. Dressing just makes it!

Ingredients

  • 2 (10 oz) packages of fresh spinach
  • 1 lb bacon
  • 2/3 lb. mushrooms sliced
  • Dressing: 4 Tbsp lemon juice
  • 12 tbsp. olive oil
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cloves garlic, minced
  • 1/4 tsp. dry mustard
  • 1/2 tsp. sugar
  • 2 egg yolks

Directions

  1. Trim and wash spinach. Dry between sheets of paper towels. Tear into bite size pieces in bowl. Render bacon until crispy; drain; crumble over spinach. Wash and dry mushrooms. Slice. Add to bowl and chill.

  2. In a dressing bottle add salt to lemon juice and shake until dissolved. Add rest of ingredients and shake. Do not chill. Make just before serving and pour over spinach mixture.
