Blueberry Gingerbread

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 cups sifted flour
  • 1/2 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 cup our milk (Add 1 tbsp. vinegar to milk)
  • 1 tsp. baking soda
  • 3 tbsp. molasses
  • 1 cup blueberries, floured

Directions

  1. Cream the shortening and sugar. Add the egg and mix well. Mix flour, ginger, cinnamon, and salt and add to creamed mixture alternately with the sour milk in which the soda has been dissolved. Add the molasses. Add blueberries and pour bbatter into greased and floured 13×0 pan. Sprinkle 3 tbsp. sugar over the batter and bake at 350 for 50 minutes to 1 hour.
