Cranberry Swril Coffee Cake

Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 pint sour cream
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. almond flavoring
  • 1 (8 oz) can whole cranberry sauce
  • 1/2 cup nuts, crushed
  • Cranberry Cake Glaze
  • 1/2 cup sugar
  • 1 tbsp. cornstarch
  • 3/4 cup fresh cranberries
  • 2/3 cup water

Directions

  1. Cream butter. Add sugar gradually. Add unbeaten eggs one at a time, mixer at medium speed. Reduce mixer speed. Add dry sifted ingredients. Add sour cream. Add flavoring.

  2. Grease and flour 9" tube pan.

  3. Put in layer of batter, layer of cranberry sauce, repeat, ending with cranberries on top. Sprinkle nuts on top.

  4. Bake at 350 for 50 minutes.

  5. Remove from pan after 5 minutes.

  6. Glaze:

  7. In saucepan stir together sugar and cornstarch; stir in cranberries and water. Cook and stir till bubbly. Cook, stirring occasionally, just till cranberry skins pop. Cool to room temperature. Do not chill. Makes 1 cup for top of cooled cake.
