Clam Chowder

Ingredients

  • 2 T butter
  • 1/2 lb bacon (chopped)
  • 1 medium white onion (chopped)
  • 1 medium red onion (chopped)
  • 3 to 4 garlic cloves (chopped)
  • 4 red potatoes (diced)
  • 4 white potatoes (diced)
  • 1 - 49 oz. can chicken broth
  • 1 - 50 oz. can of clams
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp white pepper
  • 1 qt heavy cream (or half and half)
  • fresh parsley

Directions

  1. Combine butter, bacon, red and white onions and garlic in soup pot. Cook these ingredient until light brown and onions are tender.

  2. Next, add potatoes, chicken broth, juice only from clams, salt, garlic powder and pepper. Bring these ingredients to a boil, cooking until tender.

  3. Add cream and return to boil. May add milk and flour to thicken. Add fresh, chopped parsley and clams. Bring to a boil and serve.
