Shrimp and Bacon Deviled Eggs

Ingredients

  • 12 hard-cooked eggs , peeled
  • 3/4 cup low-fat mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon cayenne pepper
  • 1/8 teaspoon salt (to taste)
  • 1 cup chopped cooked shrimp
  • 1/3 cup cooked crumbled bacon
  • 1/4 cup chopped fresh chives

Directions

  1. Cut eggs in half lengthwise; remove yolks.

  2. Process yolks, mayonnaise, and next 3 ingredients in a food processor until smooth.

  3. Stir in shrimp, bacon, and chives; taste and adjust seasoning.

  4. Spoon filling into egg white halves.

  5. Cover and chill 4 hours.
