Salmon Burger

Ingredients

  • Sauce:
  • 1/2 cup Greek yogurt
  • 3 tbsp. minced cucumber
  • 1 tsp. fresh chopped dill
  • pinch of salt
  • Burgers:
  • 1 (14.75 oz) can salmon drained
  • 1/4 cup sliced green onion
  • 1/2 tsp lime zest
  • 2 tbsp fresh lime juice
  • 2 tsps dijon mustard
  • 1/2 cup plain Greek style yogurt
  • 1 cup panko breadcrumbs
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 large egg, lightly beaten
  • 1 tbsp vegetable oil
  • 4 whole wheat or poppy seed buns
  • Garnishes: lettuce, tomato slies, red onion slices, cucumber slices

Directions

  1. Combine first 11 ingredients in a bowl and form mixture into 4 large patties about 1/2" thick. Patties will be soft.

  2. Heat oil in nonstick skillet over medium heat. Add patties and cook 5 minutes on each side. Serve on buns and garnish if desired.
