Chicken Tortilla Soup

Ingredients

  • 3 tsp olive oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 4 boneless skinless chicken breast, cut in half
  • 3 cups frozen corn
  • 1 can of black beans
  • 3/4 cup dry white wine
  • 3 tsp cumin
  • 1 tsp chili powder
  • 4 (14 oz) cans chicken broth
  • 1/4 tsp cayenne pepper
  • 3 (14 oz) cans diced tomatoes
  • 2 (8 oz) cans tomato sauce
  • 3/4 cup dry white wine
  • 1 small can tomato paste
  • 4 (14 oz) cans chicken broth
  • 3 (14 oz) cans diced tomatoes

Directions

  1. Sauté onion and garlic with olive oil in a large pot until really soft.

  2. Add rest of ingredients to rest of pot and bring to boil

  3. After 20-30 minutes remove chicken and shred. Two forks work well to pull chicken apart.

  4. Return chicken to pot and simmer an additional 45 minutes.

  5. Serve topped sour cream, shredded Cheddar, crushed tortilla chips and mashed avocado.
