Parmesan Duchess Potatoes

  • 3 lbs all purpose potatoes, peeled and cut into 2" cubes
  • 1/2 c grated Parmesan cheese
  • 1/2 c heavy cream, heated
  • 6T butter, mleted
  • 1/4 c chopped chives
  • 2 T chopped garlic


  1. Preheat oven to 400F. Lightly grease 1 1/2 Qt shallow oven-safe dish.

  2. In saucepot, bring potatoes and enough salted water to cover to a boil; cook 15 minutes more or until tender. Drain; return to pot. Add last 5 ingredients.

  3. Using potato masher, mash mixture. Season woth salt and pepper, if desired. Reserve 2 1/2 cups.

  4. Spread remaining potato mixture into prepared dish; pipe reserved potatoes around edge. Bake 30 minutes or until lightly golden.
