Shrimp Scampi

My favorite shrimp scampi. For a delicious variation substitute scallops for shrimp.

Ingredients

  • 6 tbsp butter
  • 3 cloves garlic chopped
  • 1/4 tsp oregano
  • dash tabasco
  • dash Worcestershire Sauce
  • 3/4 lb. medium shrimp, peeled and deveined
  • 1 envelope St. Ours clam broth
  • 1 tbsp flour
  • 1/4 cup dry white wine
  • 1 tsp lemon juice
  • 1/2 cup water
  • 1 tbsp chopped fresh parsley

Directions

  1. Melt 6 tbsp butter in a skillet over medium heat. Add garlic, oregano, tabasco, Worcestershire and shrimp. Saute shrimp 5 minutes until done.

  2. Remove shrimp from skillet with a slotted spoon and set aside.

  3. To the butter mixture in the skillet, stir in flour and St. Ours clam broth. Cook until bubbly about 1 minute. Add wine, water, lemon juice, parsley. Add shrimp that was set aside and heat through. Serve over linguini or angel hair. Top with fresh grated parmesan.
