Garden Fresh Tortellini Salad

Ingredients

  • 1 lb fresh or frozen spinach tortellini, cooked
  • 1 lb fresh or frozen egg tortellini, cooked
  • 1 head broccoli-broken into florets and tender skins sliced
  • 1 lb carrots, peeled, sliced 1/4"
  • 2-3 leeks, cut into thin julienne slices
  • 1/2 cup chopped fresh basil
  • Dressing:
  • 1 egg yok
  • 2 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp balsamic vinegar
  • 1 cup vegetable oil
  • 1/2 cup olive oil
  • 1 tsp. dried thyme
  • finely grated zest of 1 orange
  • salt and pepper to taste

Directions

  1. Combine salad makings and dressing and mix dressing in salad.
