Penne en Padella

Unbelievably delicious and of course not fattening at all!

Ingredients

  • 1 lb penne
  • 6 tbsp brandy
  • 3 1/2 cup chicken broth
  • 1/2 oz dried porcini
  • 4 oz chopped shitaki
  • 2 tbsp. olive oil
  • 2/3 cup heavy cream
  • 1/2 cup shredded parmesan cheese
  • chopped fresh parsley

Directions

  1. sauté penne in oil til golden. Drop in brandy. Cook til brandy is absorbed. Pour in chicken broth. Cook over medium heat til al liquid is absorbed. Keep warm.

  2. Soak porcini in 3/4 cup water for 30 minutes. Squeeze out excess liquid but save its chopped porcini pieces.

  3. sauté porcini and shitaki i 2 tbsp olive oil (5-10 minutes). When mushrooms are cooked, drop in cream, shredded cheese, salt and pepper. If more liquid is desired, add soaking water from the mushrooms. Cook 5 minutes. Pour over penne. Sprinkle with more Paremsan and sprinkle some parsley on top.
