Chicken Salad

Ingredients

  • 4 whole boneless and skinless chicken breasts
  • 2 tbsp. chopped fresh tarragon or 2tsp. dried
  • 1/4 cup sour cream
  • 1/4 cup mayo
  • 1 cup finely chopped celery
  • 1 cup chopped pecans
  • 1 Granny Smith apple, finely chopped
  • 1/2 cup seedless grapes, halved

Directions

  1. Cut chicken into bite size pieces. Plunge in boiling water. As soon as it comes back to the boil, remove from heat and let stand one minute. Drain and immediately plunge into ice water. Let set for two minutes. Drain and put into bowl.

  2. Mix with salt and pepper to taste plus the tarragon.

  3. Mix sour cream and mayo together. Stir into chicken until creamy but not we. Add and mix celery, pecans, grapes and apples.
