Asian Style Coleslaw Recipe with Peanut Butter Dressing

To make it raw, use raw nut butter instead.

Ingredients

  • 1 green cabbage
  • wedge of purple cabbage
  • fistful of fresh cilantro
  • DRESSING:
  • 1/3 cup smooth peanut butter
  • 2 teaspoons extra virgin olive oil
  • Juice from one big lime
  • 1 tablespoon coconut milk
  • 1-2 teaspoons raw organic agave nectar
  • A pinch of ginger, to taste
  • Sea salt, to taste

Directions

  1. Grate cabbage in food processor.

  2. Roughly cut cilantro and add to salad bowl.

  3. Combine all dressing ingredients in separate bowl. Whisk till smooth. Add more liquid ingredient(s), if needed.

  4. Pour dressing onto slaw and toss till coated. Cover and chill until serving.
