Cindy’s Guatemalan Rice

Great make ahead dish for a dinner party.

Serves 6 people

Ingredients

  • 1 1/2 cup rice, cooked according to package.
  • 1 cup celery, finely chopped
  • 1 small onion, finely chopped
  • 2 (4oz) cans drained mushrooms (stems and pieces).
  • 1 cup maoy
  • 1/2 lb lobster meat
  • 1 can crabmeat drained
  • 1 lb shrimp cooked

Directions

  1. Put aside rice. sauté for 5 minutes: celery and onion. Add mushrooms and mix with rice.

  2. To mayo add lobster, crab and shrimp. Mix well. Blend with rice mixture.

  3. Cover with buttered bread crumbs.

  4. Bake 1 hour at 350
