Hot Artichoke Parmigiano Dip

Ingredients

  • whole wheat baguette
  • salt and pepper
  • 14oz can quartered artichoke hearts, in water, drained and roughly chopped
  • 3oz spinach thawed and squeezed dry
  • 3/4 cup Rocco's Magnificent Mayo (recipe) or store bought low fat mayo
  • 3/4cup grated Parmigiano-Reggiano cheese
  • 2 large cloves of garlic, minced
  • pinch of red pepper

Directions

  1. Preheat 450, Line a baking sheet with parchment papper

  2. lay baguette of sheet, salt and pepper, bake until golden brown, flip, approx 6 minutes

  3. Meanwhile, in medium bowl, combine artichoke hearts, spinach, mayo, cheese, garlic and pepper, salt and pepper to taste

  4. Spread the dip in a 8 X 8 pan Bake for 10 minutes

  5. Turn broiler to high and boil the dip, until golden and bubbly, about 2 minutes
