Skillet Roasted Halibut

Ingredients

  • 4 halibut fillets, 1" to 1 1/2" thick, 8 oz. each
  • Coarse salt
  • Fresh ground pepper
  • 1/2 tsp sugar
  • 1 tbsp vegetable oil
  • Lemon wedges

Directions

  1. Heat oven to 425 degrees. Dry fillets thoroughly with paper towels & season with salt & pepper. Sprinkle very light dusting of sugar (about 1/8 tsp) evenly over one side of each fillet. Heat oil in oven safe non-stick skillet over high heat until smoking. Place fillets in skillet sugar side down, press down lightly on fillets to ensure even contact with pan. Cook this side until browned, 1 to 1 1/2 minutes. Using 2 spatulas, carefully flip fillets over, do not continue to fry, but transfer skillet into oven. Roast fillets until centers are just opaque, 135 degrees, 7 to 10 minutes. Serve with lemon wedges.
