Fresh Apple Pound Cake

Ingredients

  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3 cups unbleached all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups apples , peeled and chopped (1-2 large, whole)
  • 2 cups pecans , chopped

Directions

  1. Preheat oven to 350°; grease and flour a 10-inch tube pan.

  2. In a bowl, combine the oil and sugar.

  3. Beat in the eggs, one at a time, mixing well after each addition; stir in vanilla.

  4. In another bowl, combine the flour, cinnamon, salt, and baking soda.

  5. Stir the flour mixture into the egg mixture.

  6. Fold in the apples and nuts; pour the batter into the prepared pan.

  7. Bake for 1 1/2 hours, or until a pick comes out clean.

  8. Let cake cool in pan for 10 minutes before transferring it to a serving plate.

  9. May drizzle the warm cake with caramel sauce before serving.
