Ginger Cider

Ingredients

  • 1 (64 ounce) bottle apple cider
  • 2 cups pineapple juice
  • 1 tablespoon grated fresh ginger
  • 1 vanilla bean , split lengthwise
  • 1 cinnamon stick , broken (3-inch stick)
  • 6 black peppercorns

Directions

  1. Stir together the first 3 ingredients in a large Dutch oven.

  2. Scrape the vanilla bean seeds into the cider mixture; add vanilla bean pod, cinnamon stick pieces, and peppercorns.

  3. Bring to a simmer over med-high heat; decrease heat to low.

  4. Keep warm until ready to serve.

  5. Before serving, pour cider through a wire-mesh strainer into a serving bowl, discarding solids.
