Carrot Cake

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 4 extra large eggs, at room temperature
  • 1 1/2 cups sugar
  • 1 cup canola oil
  • 1/2 cup buttermilk
  • 2/3 cups firmly packed brown sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 cup crushed pineapple, drained
  • 1 pound finely grated carrots
  • 1 cup toasted chopped pecans
  • 1 cup golden raisins

Directions

  1. Mix dry ingredients

  2. Mix wet ingredients

  3. Mix everything together and pour into large rectangular cake pan or two smaller round pans.

  4. Bake at 350 degrees for 30-40 minutes
