Wild Rice and Beef or Pork

Cook time: 40 minutes
Serves 4 people

Ingredients

  • 1 Lb. ground beef or pork
  • 1 Package (6.2 oz) long-grain and wild rice mix (prefer fast cook)
  • 1 Can (10-3/4 oz) condensed tomato soup
  • 1/2 C. milk
  • 1/4 tsp pepper
  • 1 C. Shredded Cheddar cheese (4 oz)
  • Could maybe add frozen peas

Directions

  1. Heat oven to 350 degrees. Spray 2-quart casserole with cooking spray.

  2. Cook ground beef or pork in 10-inch skillet, until brown; drain

  3. Make rice mix as directed on package-except omit butter.

  4. Stir rice mixture, soup, milk and pepper into ground beef. Spoon into casserole.

  5. Cover and bake 30 minutes.

  6. Sprinkle with cheese and bake uncovered 5-10 minutes until cheese is melted and mixture is hot.
