Nutri Grain Muffins

Healthy whole grain muffins.

Mom made this quite frequently as a healthy morning muffin. Nutri Grain just as a cereal isn’t available anymore. You could substitute with another whole grain flakes cereal. Adding raisins makes these even more moist and scrumptious…if you like raisins.

Ingredients

  • 1 1/4 cups (whole wheat) flour
  • 1/2 teaspoon salt
  • 1 Tablespoons baking powder
  • 1/4 cup sugar
  • 2 1/2 cups Nutri Grain cereal
  • 1 1/4 cups milk
  • 1 egg
  • 1/3 cup vegetable oil

Directions

  1. Preheat oven to 400° F. Grease 12 muffin cups.

  2. Stir together flour, baking powder, salt, and sugar in a separate bowl and set aside.

  3. Measure cereal and milk into large mixing bowl. Stir to combine. Let stand about 3 minutes or until softened.

  4. Add egg and oil to cereal mixture, beat well. Set aside.

  5. Add flour mixture to cereal mixture, stirring only until ingredients combine. Do not overmix. Portion batter evenly into 12 greased muffin cups.

  6. Bake at 400° F for 20 to 25 minutes until lightly browned.
