Stuffed Shells

Ingredients

  • 2 eggs beaten
  • 2 15 oz containers of ricotta cheese
  • 2 c shredded mozzarella cheese
  • 1 c parm cheese, divided
  • 1/2 c chopped parsley
  • 1 t salt
  • 1/8 t pepper
  • 12 oz pkg jumbo shells, cooked and drained
  • 3 c spaghetti sauce
  • 1 pkg frozen spinach, thawed and drained (opt)
  • 1 lb cooked Italian sausage or ground beef (opt)

Directions

  1. In medium bowl, stir together eggs, ricotta cheese, mozzarella cheese, 3/4 c parm cheese, parsley, salt and pepper. Spoon about 2 T of mixture into each shell. Place into baking dish.

  2. Spoon spaghetti sauce over shells. Sprinkle w/ some mozzarella cheese and parm cheese and bake at 350 for 30 minutes. Freeze shells ind. on baking sheet and place in bag after solidly frozen.
