Pesto Ziti

Ingredients

  • 3 cup ziti (uncooked)
  • cook as directed.
  • Tomato Sauce:
  • 2 T olive oil
  • 1 medium onion chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 2 1/2 cups tomatoes (crushed in puree)
  • 1/4 tsp salt
  • 1/2 tsp pepper (divided)
  • Cheese Mixture:
  • 1/2 cup Ricotta cheese
  • 1 cup Mozzarella cheese (divided)
  • 1/4 cup Pesto

Directions

  1. Heat oven to 350 degrees. Cook Ziti. Drain and rinse. Heat oil in saucepan and saute onion 5 minutes. Add garlic and cook one minute. Add tomatoes, bay leaf, salt and 1/4 tsp pepper. Simmer for 10 mins. Remove bay leaf. In bowl combine Ricotta cheese, 2/3 cup Mozzarella cheese, pesto and 1/4 tsp pepper. Place half ziti in an 8" square baking dish coated with cooking spray. Cover with half tomato sauce followed by all cheese mixture. Fill with remaining pasta and then sauce. Cover with remaining Mozzarella cheese. Bake for 30 mins.
