Stuffed French Toast

Ingredients

  • 1 cup pecans, toasted and chopped
  • 3/4 tsp cinnamon
  • 2 T honey
  • 8 slices country-style bread each 1 inch thick
  • 6 eggs
  • 2 cups half and half
  • 1 1/2 T Brown sugar
  • 1/4 tsp ground nutmeg
  • Syrup

Directions

  1. In small bowl, combine pecan, 1/2 tsp cinnamon and honey to make a soft paste. Lay bread slices flat. Using a sharp knife, slice bread horizontally through the middle, but leaving bread connected at one end. Evenly spread 1 T. pecan mixture inside the opening of each slice. Arrange break in a single layer in a large shallow baking dish. In large mixing bowl, whisk eggs, half and half, sugar, 1/4 tsp cinnamon, and nutmeg. Pour over bread and turn slices to coat evenly. Let stand for 10 mins. Preheat electric griddle and cook French toast until golden on both sides.
