Apricot Foldovers

Another favorite Christmas cookie.

Ingredients

  • 1/4 cup orange juice
  • 6 Tablespoons sugar
  • 4 ounces (1 cup) dried apricots, dip scissors in flour, then snip
  • Dough
  • 1 1/4 cups unsifted all-purpose flour
  • 6 Tablespoons sugar
  • Pinch salt
  • 4 ounces cream cheese
  • 1/2 cup butter or margarine
  • 1 Tablespoon sour cream
  • Glaze
  • 1 cup confectioners’ sugar and 1 Tablespoon water

Directions

  1. Filling: Mix sugar, juice, and apricots, heat to boiling. Simmer covered 10 minutes. Simmer uncovered 10 minutes more, stirring until liquid is gone. Cool.

  2. Dough: Mix flour, sugar, and salt with pastry blender, cut in cream cheese and butter until like cornmeal. Stir in sour cream until pastry holds together. Form into ball and refrigerate for 1 hour.

  3. Work with half dough at a time. On floured surface, roll ½ dough to 10” square. Cut into 2” squares, place ½ teaspoon filling diagonally on each square. Pull up to make triangles.

  4. Bake in 325° F. oven for 12-15 minutes. Let cool and drizzle glaze on cooled cookies. Makes 50 cookies.
