Pot Roast

Simple roast beef au jus with carrots, rice and green beans.

Ingredients

  • Chuck roast
  • Coarse Salt and pepper
  • Olive oil
  • 1-2 medium onions
  • 3 or 4 garlic cloves
  • 4-5 celery stalks, chopped
  • Carrots, chopped
  • 1/2 cup dry wine
  • Beef stock or broth, or chicken stock or broth

Directions

  1. Season both sides of a chuck roast with coarse kosher salt and fresh ground pepper.

  2. Using 2 Tablespoons olive oil in a cast iron skillet, brown well both sides of meat. Place roast in roasting pan.

  3. Meanwhile, sauté onions and whole garlic cloves (3 or 4) in skillet with pan drippings.

  4. Deglaze pan with 1/2 cup cooking wine (Or any dry wine — also a can of Budweiser is very nice).

  5. Pour vegetables and wine over roast and add carrots and celery.

  6. Roast in 325 degree oven for 2/12 to 3 hrs. Or prepare and cook in crock pot for 6-8 hours on high.

  7. Beef stock or broth can be added to the meat juices for more gravy at the end (or beginning especially when cooked in crock pot).
