Garlic Chicken Stir Fry With Quinoa, Peppers & Basil

Ingredients

  • 1 Cup Quinoa cooked with stock
  • 2 Cups Stock (for Quinoa)
  • 1 1/2 lbs boneless chicken breasts
  • 4 Tbs Olive Oil
  • 1 Small Onion, chopped
  • 2 Bell peppers, seeded & thinly sliced
  • 5 cloves garlic, thinly sliced
  • 20 leaves fresh sweet basil, julienned

Directions

  1. Cut chicken into cubes.

  2. Saute chicken until brown, about 5 minutes.

  3. Add onion, peppers and saute for 2 minutes.

  4. Add garlic saute 1-2 minutes.

  5. Remove from heat, add basil and quinoa.

  6. Sprinkle with grated parmesan cheese.
