Smoky Scalloped Potatoes

Ingredients

  • 2 cups shredded smoked gouda cheese (8 oz.) or 2 cups American cheese (8 oz.)
  • 1 (10 3/4 ounce) can condensed cream of celery soup
  • 1 (8 ounce) carton sour cream
  • 1/2 . chicken broth
  • 1 1/2 lbs yukon gold potatoes , thinly sliced (about 5 cups)
  • 1 1/2 lbs sweet potatoes , peeled and cut into 1/4-inch slices (about 5 cups)
  • 1 large onion , sliced

Directions

  1. Lightly coat the inside of a 4 1/2 or 5-quart slow cooker with cooking spray.

  2. In a bowl, combine cheese, soup, sour cream, and broth; set aside.

  3. In the prepared cooker, layer half of the potatoes and half of the onion.

  4. Top with half of the soup mixture, spreading evenly.

  5. Repeat layers.

  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
