Southwest Skillet

Ingredients

  • 1 lb ground beef
  • 3/4 cup chopped onion
  • 1 (16 ounce) can kidney beans , rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes , undrained
  • 1/2 cup uncooked instant rice
  • 1/2 cup water
  • 3 tablespoons chopped green bell peppers
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1 cup corn chips
  • 1 1/2 cups shredded cheddar cheese

Directions

  1. In a skillet, cook beef and onion until meat is browned; drain.

  2. Add next 8 ingredients; mix well.

  3. Bring to a boil.

  4. Reduce heat; cover and simmer for 20 minutes, stirring occasionally.

  5. Remove from the heat.

  6. Sprinkle with the corn chips and cheese.

  7. Cover and let stand for 3 minutes or until cheese is melted.
