Bean @ Bacon Soup

Ingredients

  • 1 lb. Navy Beans
  • 1/2 lb. Bacon
  • 8 C. Water
  • 2 tbsp. parsley
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 C. finely chopped celery
  • 1 onion finely chopped
  • 1 lg. carrot finely chopped
  • 1 bay leaf (to remove later)

Directions

  1. Heat beans in 8 C. water. Boil gently 2 minutes. Turn off and let set 1 hour. Put in Crock Pot and add remaining ingredients. Cover and cook 12 to 14 hrs on low. Remove bay leaf before serving.
