Broccoli Cheese Soup

Ingredients

  • 1/2 C. flour
  • 1 clove garlic minced
  • 1/3 C. margarine
  • 1 tbsp. onion
  • 1 tsp. worcestershire sauce
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. dry mustard
  • 3 C. chicken broth
  • 1 1/2 C. half and half
  • 1 C. beer or broth
  • 16 oz. cheese (sharp cheddar and jack)
  • Broccoli

Directions

  1. Precook broccoli

  2. In sauce pan, melt margarine. Stir in flour.

  3. Cook 1 minute stirring constantly until smooth and bubbly. Add garlic, onion, worcestershire sauce, salt, mustard and pepper. Blend well.

  4. Gradually add broth/beer.

  5. Cook until thickened, stirring constantly.

  6. Add cheeses, stir until melted.

  7. Add half and half. Heat gently- DO NOT BOIL.

  8. Add broccoli and serve.
