Breakfast Biscuits

Serves 8 people

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons white sugar
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 teaspoons light olive oil
  • 1/2 cup melted butter
  • 1 cup of 2% milk

Directions

  1. In a large bowl, combine flour, baking powder, sugar, cream of tartar and salt.

  2. Melt cube of butter and stir in, then and 1/2 of the milk. Mix well with fork, then add the rest of the milk. Let batter rest 5 minutes, and mix again with fork. Repeat a few more times adding oil last.

  3. Preheat oven to 425 degrees F.

  4. With the same fork, drop batter on a full size cookie sheet covered with foil that has been coated with non-stick butter spray. Shape with work (no thin edges). Enough batter to cover the sheet with either small or large biscuits – you choose. Leave at least 1" around each biscuit and they will grow.

  5. Bake in oven until golden on the bottom edges, about 10-12 minutes for large biscuits, 8-10 minutes for small. Serve HOT.
