Italian Beef Stew

Serves 8 people

Ingredients

  • Olive oil
  • 1 1/2 cups chopped onion
  • 1/2 cup chopped carrots
  • 2 lbs stew meat
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • can diced tomatoes
  • 1 1/2 cups beef broth
  • 1/2 cup water
  • 2 tsp fresh oregano
  • 1 pkg mushrooms
  • 2 tbsp fresh basil
  • 1 tbsp chopped parsley

Directions

  1. Heat dutch oven over medium heat.

  2. Add oil and saute chopped onion and carrot for 8 minutes.

  3. Add garlic and saute for 45 seconds.

  4. Dredge meat in flour and brown on all sides.

  5. Return meat and onion to pan.

  6. Add tomato and spices; bring to boil.

  7. Cover, reduce heat and simmer 45 minutes.

  8. Simmer uncovered for one hour.
