Crockpot Chili

This is a very large batch and I get at least 3 meals out of it. It freezes well.

Cook time: 420 minutes

Ingredients

  • 1T olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2-4cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 14 oz. can diced tomatoes
  • 4 15 oz cans red kidney beans
  • 2 15 oz cans pinto beans
  • 2 15 oz cans black beans, rinsed
  • 2 t salt
  • 1 t. pepper
  • 1/4-1/3 cup chili powder
  • 1 T. cumin powder
  • Tabasco to taste

Directions

  1. Heat the olive oil in a pan. Sauté the meat until the meat is brown.

  2. In a very large bowl, mix all ingredients together well. Pour into 6-7 qt. crockpot and cook on low for 7-8 hours. Taste and adjust seasonings half way through.

  3. Use cheese, minced onions, sour cream, tortilla chips for garnish.
