Chicken Diesola

I’m always in search of good chicken recipes, and although these weren’t marked by Grandma, I’m adding these poultry recipes because they are simple and delicious.

Cook time: 30 minutes
Serves 4 people

Ingredients

  • 1 chicken of about 3 pounds
  • 1/4 pound butter
  • 1 cup dry Champagne (a good dry white wine may be substituted)
  • Salt and pepper

Directions

  1. Have the chicken cleaned and split in half, and have the butcher flatten it.

  2. Sprinkle with salt and pepper and rub with a couple tablespoons melted butter. Place rest of butter in large iron skillet and let it melt. In it place the chicken, flat, cover tightly and cook over medium-high flame for 5 minutes.

  3. chicken, cover and cook 5 minutes more over medium-high flame. Then lower flame and cook for 10 minutes. Add champagne or wine and cook uncovered over medium-high flame until wine has evaporated. Serves 2.
