Southwestern Turkey Soup Recipe

Ingredients

  • 1 1/2 cups turkey, cooked and shredded
  • 4 cups broth
  • 1 28 oz can diced tomatoes
  • 6 chile peppers, chopped
  • 1 onion chopped
  • 2 cloves garlic crushed
  • 1 tablespoon lime juice
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon ground cumin
  • salt and pepper to taste
  • 0.5 teaspoon dried cilantro
  • 1 cup shredded Monterey Jack cheese
  • 1 can corn
  • 1 can beans

Directions

  1. In a crockpot combine turkey, broth, tomatoes, chiles, corn, beans, onion, garlic, and lime juice. Season with cayenne, cumin, salt, and pepper. Cook 8 hours.

  2. Stir in cheese and cilantro, and cook one hour on high. Serve with cornbread.
