Vegetable Strata

This is a good savory strata for a brunch.

Cook time: 60 minutes
Serves 6 people

Ingredients

  • 1 loaf day-old French bread
  • 2 T. canola oil
  • 1 medium onion
  • 1 red bell pepper, diced
  • 1 1/2 C. sliced mushrooms
  • 1 can artichoke hearts, sliced
  • 10 eggs
  • 2 C. milk
  • 1 t. salt
  • 1/4 t. white pepper
  • 1 1/2 C. shredded Jack, divided
  • 1/4 C. parmesan, grated

Directions

  1. Spray 13”x9” glass baking dish with cooking spray. Cut bread into cubes and place in baking dish.

  2. In nonstick skillet, heat oil over medium high heat. Add onion, red pepper and mushrooms; sauté 4-5 min. Add artichokes to warm through.

  3. In a bowl combine eggs, milk, salt and pepper. Top the bread cubes with the vegetables, artichokes and half the Jack cheese. Pour egg mixture over; top with remaining Jack and Parmesan cheeses. Cover with plastic wrap; refrigerate overnight. Heat oven to 350º. Bake uncovered 50-60 min. Let stand 10 min. before cutting.
