Grasshopper Pie

Sooo Good! This recipe is well over 30 years old. I believe it’s from an old Betty Crocker cookbook.

Ingredients

  • 1-1/2 c. chocolate wafer cookie crumbs
  • 1/4 c. sugar
  • 1/4 c. melted butter
  • 32 lg. or 3 c. mini marshmallows
  • 1/2 c. milk
  • 1/4 c. crème de menthe
  • 1/4 c. white crème de cacao
  • 1-1/2 c. heavy cream
  • Green food coloring

Directions

  1. Preheat the oven to 350 degrees.

  2. Combine the cookie crumbs, powdered sugar and melted butter, stirring well, and press into the bottom and up the side of a 9-inch pie dish. Bake 10 minutes; cool completely.

  3. In a saucepan over medium-low heat, combine the marshmallows and milk; stir constantly until the marshmallows have melted completely. Stir in the crème de menthe and crème de cacao and chill the mixture, stirring occasionally until it has thickened slightly.

  4. In the large bowl of an electric mixer, whip the cream until it is stiff. Gently fold in the marshmallow mixture along with 2 or 3 drops of green food color.

  5. Pour the filling into the cooled crust. Chill until set, at least 3 hours or more.
