Tabbouleh

The cucumber is my addition, so omit if you like. You may need to add more lemon juice and olive oil if too dry.

Serves 6 people

Ingredients

  • 2 c. bulgar wheat
  • 4 c. water
  • 3/4 c. lemon juice, divided
  • 4 red-ripe Roma tomatoes, seeded, chopped
  • 1 bunch green onions, chopped
  • 1/2 cucumber, peeled, seeded, chopped
  • 1/4 c. chopped fresh mint
  • 1/4 c. chopped fresh parsley
  • 1/4 c. chopped fresh basil
  • Salt and pepper to taste
  • 1/4 c. olive oil

Directions

  1. In large bowl combine bulgar, water and ¼ cup of the lemon juice; let soak 24 hours. Drain.

  2. Add chopped tomatoes, green onions, cucumber and herbs to drained soaked bulgar. Season with salt and pepper. Stir in olive oil and remaining ½ cup lemon juice. Cover and refrigerate 24 hours. Mix before serving.
