Cottage Cheese Roast

This is a terrific vegetarian roast and my meat-eating friends love it. I usually serve it with my German Potato Salad w/o the bacon.

Prep time: 15 minutes
Cook time: 75 minutes
Serves 8 people

Ingredients

  • 5 eggs, whisked
  • 1 envelope Lipton Onion Soup
  • 1 stick butter, melted
  • 1 C. chopped walnuts (or pecans)
  • 1 1/2 lb. cottage cheese, small curd
  • 6 C. Special K cereal (original unflavored)

Directions

  1. Pre-heat oven to 350°. Spray a 9X9 pan with cooking spray.

  2. Mix ingredients together in order. NOTE: If the cereal flakes are too large, crush slightly. (Years ago, the cereal flakes were about half the size they are now.)

  3. Spread evenly in prepared pan.

  4. Bake 1 to 1½ hours until done in the middle. Let rest for 10 minutes before cutting.
