Crockpot Chicken Stew

Ingredients

  • 1 lb. chicken, cut in 1” cubes and sautéed
  • 1 large onion, diced
  • 4 carrots, sliced
  • 4 potatoes, pealed & cut into cubes
  • 8 oz mushrooms, cleaned and halved
  • 1 32 oz. chicken stock
  • 1 28 oz. diced tomatoes
  • 1 t celery seed
  • 1 t dry thyme
  • Salt & pepper to taste
  • 1 cup frozen peas (added last 30 minutes)
  • 2 T. butter
  • 3 T. flour
  • 2 C. cooking liquid
  • Cooked egg noodles

Directions

  1. Place all ingredients in crockpot except peas. Cook on low for 8 hours or high for 4 hours. Add peas 30 minutes prior to end of cooking.

  2. Make a roué with the butter, flour and cooking liquid; stir into stew to thicken.

  3. Serve with cooked egg noodles. Don’t cook noodles in crockpot; they will get mushy.
