Chicken Pot Pie

This version is more rustic, with potatoes layered and flour sprinkled between layers.

Ingredients

  • Pie pastry, top and bottom
  • 1 pint chicken, cooked and shredded
  • 3 potatoes, very thinly sliced
  • 2 cups frozen mixed vegetables
  • flour
  • salt
  • pepper
  • garlic
  • onion powder
  • 1 Tbsp parsley
  • 1 tsp chervil (optional)
  • 1/2 tsp coriander
  • 1 pint chicken broth

Directions

  1. Linen a large pie dish with pastry.

  2. Shred chicken over the bottom. Place 3 layers of potatoes with 2 layers mixed vegetables, sprinkling each layer with flour, salt, pepper, onion, and garlic, as well as the spices.

  3. Pour chicken broth over all.

  4. Place on top crust

  5. Bake at 400 for 45 min. – 1 hour.
