Calzone

Ingredients

  • Crust:
  • 1 pkg active dry yeast
  • 1 cup warm water
  • 1 tsp salt
  • 1/4 cup olive oil
  • 2 1/2 - 3 cups flour
  • Filling:
  • 1/2 cup tomato sauce
  • 1 tsp basil
  • 1 tsp oregano
  • 1/4 lb. mozzarella, shredded
  • 1/2 lb. Italian sausage, cooked (or pepperoni)
  • Glaze:
  • 1 egg white, beaten
  • 1 tsp fennel seeds (optional)

Directions

  1. To prepare the crust, in large bowl, dissolve yeast in the warm water. Add salt and oil. Add flour gradually until a stiff dough forms. Turn out onto lightly floured board and knead until dough is smooth and satiny, about 5 min. Add flour as needed to prevent sticking. Place into lightly greased bowl; cover and let rise in a warm place until dough has doubled, about 1 hour.

  2. ver baking sheet with parchment paper or lightly grease. Roll out dough to make an oval about 14 × 10. Transfer to baking sheet.

  3. Spread a 5-inch strip down the center with tomato sauce; sprinkle with basil and oregano. Distribute cheese and sausage over sauce evenly.

  4. Lift up dough from both sides along the length of the covered oval, and cover the filling, making the seam across the top center of the calzone. Pinch edges to seal.

  5. Let rise 30 min. till dough looks puffy. Make vent holes. Brush with egg white; sprinkle with seeds.

  6. Bake 25 min. at 400 until golden.

  7. Cut into crosswise sections.
