Southwestern Turkey Sandwich

Ingredients

  • 1/4 cup reduced-calorie mayonnaise
  • 2 Tbsp cilantro, fresh, chopped
  • 1/2 tsp lime zest
  • 2 tsp fresh lime juice
  • 1/2 tsp ground cumin
  • 1/8 tsp ground red pepper
  • 8 slice mixed-grain bread
  • 8 oz deli-sliced turkey, smoked-variety
  • 8 piece lettuce
  • 1/4 tsp table salt
  • 2 medium tomato(es), thinly sliced

Directions

  1. Combine mayonnaise, cilantro, lime zest and juice, cumin, salt and pepper together in a small bowl.

  2. Spread 1 tablespoon of the mayonnaise mixture on each of 4 slices of bread. Layer each with 2 ounces of turkey, 2 lettuce leaves and a few tomato slices. Cover with remaining bread slices and serve.
