Peasant Pasta

Ingredients

  • 1 Tbsp olive oil
  • 1/2 lb. hot Italian sausages, casings removed
  • 1 lb. sweet Italian sausages, casings removed
  • 3 garlic cloves, chopped
  • 1/2 cup chicken broth
  • 1 28-oz. can crushed tomatoes
  • 1/2 cup heavy cream
  • salt and pepper
  • 1 cup frozen peas
  • 24 leaves fresh basil, torn or thinly sliced
  • 1 lb. penne pasta, cooked al dente
  • grated Italian cheese

Directions

  1. Heat a large deep skillet over medium high heat. Add olive oil. Add sausage, crumbling as it browns. Add garlic to pan. Remove meat and deglaze the pan with broth. Stir in crushed tomatoes and bring the sauce up to a bubble, then reduce the heat to a simmer. Stir cream into sauce, season with salt and pepper. Stir peas and basil into sauce to combine. Toss hot drained penne into pan with the sauce.
