Cheese and Chicken Enchiladas

Ingredients

  • 1 onion, chopped
  • 2 Tbsp butter
  • 1 1/2 cup chicken, cooked and shredded
  • 12-oz. picante
  • 3 oz. cream cheese, softened
  • 1 tsp cumin
  • 2 cups cheddar cheese, shredded
  • 8 flour tortillas

Directions

  1. eat oven to 350.

  2. Saute onion and butter until tender. Stir in chicken, 1/4 cup picante, cream cheese, and cumin. Cook until heated. Stir in 1 cup cheese. Spoon 1/3 cup chicken mixture in center of each tortilla; roll up. Place seam side down in baking dish. Top with remaining picante and cheese.

  3. Bake at 350 for 15 minutes.
