Potatoes Romanoff

Also known as “Funeral Potatoes” – start a day ahead of time.

Prep time: 30 minutes
Cook time: 60 minutes
Serves 12 people

Ingredients

  • 30oz Bag Frozen Potatoes (shredded - sometimes called hash browns)
  • 1 Pint Sour Cream w/chives
  • 2 Bunches Green Onions
  • 1 1/2 cups shredded medium cheddar
  • 2 tsp Garlic Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Paprika

Directions

  1. Place Frozen Potatoes in large bowl.

  2. Wash, trim, thinly slice green onions.

  3. Add 1/2 of the green onions, 1/2 the sour cream, and 1/2 cup cheddar cheese, fold in. Add remaining green onions, sour cream, and another 1/2 cup cheddar cheese, fold in. Fold, fold, fold. Rest, rest, rest. Fold, fold, fold. Rest, rest, rest. 1/2 the Garlic salt & Pepper, mix, repeat. You can do this in as little as 10 minutes, or take up to 1 hour. It is easier to mix while the potatoes remain frozen.

  4. Heavily Pan coat a 13″ × 9″ cake pan and spoon mixture in and spread evenly.

  5. Top with 1/2 cup cheddar cheese and sprinkle with Paprika (for color).

  6. Cover with Aluminum Foil and refrigerate for 12-36 hours.

  7. Bake at 325 for 60 minutes.

  8. Remove foil and serve.
