Krumkake

Store in a loosly covered box…if it’s airtight, the cookies will not stay crisp.

Ingredients

  • 4 eggs
  • 5 T. heavy cream
  • 1/2 C. butter, melted
  • 1 T. vanilla
  • 1 C. sugar
  • 3/4 C. all-purpose flour
  • 2 t. cornstarch

Directions

  1. Heat ungreased krumkake iron over medium-high heat on smallest surface unit of electric or gas range (6-7 minutes).

  2. Beat eggs, cream, butter, vanilla, sugar, flour and cornstarch until smooth.

  3. Test iron with a few drops of water. If they skitter around, iron is correct temperature. Lightly brush inside top and bottom of iron with shortening or vegetable oil. Drop 1 teaspoon batter onto the middle of iron; close gently.

  4. Cook about 15 seconds on each side or until light golden brown. Keep iron over heat at all times. Remove cookie with knife. Immediately roll cookie around a krumkake roller or the handle of large wooden spoon. Cool on wire rack.

  5. Makes 6 dozen cookies

  6. NOTE: I always make one and a half recipes. The first few cookies may stick and be dark, but the iron does temper. You will get very tired of counting to 15!
